Today I’m heading to Palm Springs with some of my girlfriends! I’m so excited to get a little break from life at home. Not that things aren’t great at home, but being a mom is tiring. Some days are better than others (duh) but some days are downright exhausting. Yesterday was one of the exhausting kind. By dinnertime, I was watching the clock so closely, ready for bedtime for both the kids and me, lol!
Now that my boys are older, I feel like those exhausting days are less and less frequent just because they’re mostly self sufficient. However, having teenagers is no picnic either! I think I lucked out though. My 15 year old and 12 year old are pretty good kids. They’re both great helpers around the house and awesome babysitters! Thank goodness for that! 😉
I would say about half of my boys are good eaters and the other half are more picky. My oldest and second to youngest don’t really like baked goods but my second oldest and youngest have an insane sweet tooth and will eat ANY dessert I make. This is why I’ve stopped making desserts frequently. Definitely not because I’ll eat it all, nope. 😉
When I made this Poppy Seed Cake, my boys were turning on the light in the oven to check on it and counting down the time until it was finished. I pulled it out of the oven and my boys were all over it! I had to pry it away to be able to take pictures, lol!
This is the easiest Poppy Seed Cake I’ve ever made and (dare I say the word nobody likes), super moist! It practically falls apart in your hands when you pick up a slice, that’s how soft and delicious it is! The use of pudding really helps create a soft cake. Also, using a cake mix makes this such an easy recipe!
You only need one mixing bowl and only SIX easy ingredients to whip up a semi-homemade Poppy Seed Cake the entire family will love!
Easy Poppy Seed Cake
Ingredients
- 1 package yellow cake mix sugar free or regular
- 1 1-oz package sugar-free instant vanilla pudding
- 4 eggs
- 1/3 cup oil canola or coconut
- 1 cup water
- 1 1/2 tsp. poppy seeds
Instructions
- Preheat oven to 350ºF. Butter and flour a 9x5 bread pan. Set aside.
- Mix all ingredients together in a large mixing bowl. Pour into prepared dish and place in preheated oven. Bake for 50-55 minutes, or until a toothpick comes out clean.
- Carefully take out of pan, slice and enjoy!
