3-Ingredient Easy Cake Mix Cookies are just about as easy as “homemade” cookies can get! Only three ingredients and they bake up in under 10 minutes!
TGIF! It’s a three day weekend!! For some, I guess it’s a four day weekend and maybe some kids are already out of school? Where I live, the kids don’t get out until June 9th. Either way, I’m glad to have a break from the monotony of making lunches, rushing kids out the door and homework.
I’m not sure how I feel about summer yet! Yesterday I signed up my older boys for the summer camps they wanted to do and it put a serious dent in my wallet! Those camps are NOT cheap.
Now I just have to sign my younger two guys up for something. I can’t believe how fast the camp prices can add up. Part of me wants them to be active (ahem, and out of my hair) for a few hours during the day but part of me wants to savor the time they’re home during the summer. They actually WANT to spend time with me, unlike my older two “cool” kids that would much rather spend time with their friends.
My parents never signed me up for summer camps! We just had free reign to run around the neighborhood and have fun! Those were the good ‘ol days. 😉 I think I’m learning now more than ever that I need to soak up these few years with my two younger boys. I’m really looking forward to volunteering in my youngest’s kindergarten classroom next year and being a part of the art classes in my first graders class. They love it when I come in and volunteer!
What are your plans for the Memorial Day holiday? We’re planning on heading to the beach as much as possible! We’ll probably BBQ and eat some yummy desserts too. I plan on making these SUPER easy cake mix cookies again!
I made them festive by adding some red, white & blue M&M candies but they’re good without them or even with chocolate chips instead. You won’t believe how easy these cookies are to make. They only have 3 ingredients and bake up in about 10 minutes. SO. EASY.
I think the best part about them, is the softness of the cookies. They’re tender and soft and sort of cake-like but sort of brownie-like, too. Seriously so good. My boys can make these easy cake mix cookies all by themselves, without any help.
These would also be great for teacher’s gifts for the end of the year! This is such a versatile recipe. If you don’t like chocolate, try another cake mix flavor you do like. You will fall in love with these crazy easy cake mix cookies! Have a great long weekend!
3-Ingredient Easy Cake Mix Cookies
Ingredients
- 1 chocolate sugar-free cake mix
- 1/2 cup canola or coconut oil
- 2 eggs
- M&M candies if desired
Instructions
- Preheat oven to 375ºF.
- Mix together dry cake mix, oil and eggs until smooth. Drop by tablespoon onto ungreased cookie sheet. (I like to roll mine into a ball to make the sizes more even). If not using M&M's, bake for 8-10 minutes.
- If using M&M candies, bake for 6 minutes, pull from oven and press candies into the tops of each cookie. Place back in oven for 2-4 minutes.
- Let cool for a couple minutes on baking sheet and carefully take off using a spatula. Enjoy!

These are so PRETTY and I bet just as delicious! We never did camps growing up either except for a FREE basketball thing put on by my varsity coach three days a week. Times have changed!
These cookies are truly the easiest cookies ever to bake. My family couldn’t believe that they were sugar free (except for the M&Ms). They are soft and delicious. Might experiment with different cake mixes for variety.
