It’s that time of year – back to school time! Here’s a quick lunch idea for you to pack in your child’s healthy lunchbox…Creamy Turkey Pinwheels! (Thank you Tillamook for sponsoring this post!)
Based on what I’m seeing on Facebook the last two weeks, my boys are the very last kids on earth to start school. Seriously! They’re finally starting on Monday and I’m a mixture of excited and sad. I love not having a set schedule and sleeping in. I love being able to go to the beach or the mall on a whim. And I love just hanging with my boys all day. No homework, no schedule, just fun.
But on the other hand, I crave schedule. I need to have some sort of structure. And so do my boys. They’re actually excited to go back, which is good! We had three different registrations this week (my boys will be in three schools again this year, ugh!) and my 11 year old is starting middle school. He was able to walk with my oldest around the campus. Find his locker and all of his classes. I could see the spark of excitement in his eyes as he walked the new campus. It’s such an exciting time for him!
Don’t get me started on my little 5 year old that’s starting kindergarten this year. I’m tearing up just thinking about it!! They grow up so dang fast! He has a meet and greet today where we’ll go and meet his new teacher and see his new classroom. I know I’m going to cry when he goes the first day but he is SO excited about it.
My 4 year old is heading to his last year of preschool. I swear he was just a tiny infant. Who does he think he is, growing up so fast? I think I need another baby. Having a quiet house is going to be fun for maybe the first day and then I’m thinking maybe it might suck a little bit. 😉 We’ll see!
Anywho, let’s talk about this super easy “recipe”. I put it in quotes because it seems too easy to be called a recipe! Whether you call them roll-ups or pinwheels, I love making them. They’re easy to make, stay good in the fridge for a day or so, and look super cute in a little ones (or big ones) lunchbox.
You can also switch the recipe up quite a bit depending on what you have in the fridge. I like to buy the Greek yogurt cream cheese. Have you tried that before? It’s creamier and healthier than the basic sort of dense cream cheese. You can mix in diced green chilies (I love chilies) but if your kids don’t like the flavor, switch it up and add black olives, green onions, or even a little bit of pesto into the cream cheese. Throw on some Tillamook cheese and some turkey. Roll it up and slice. I skewered mine with some bamboo sticks and a cherry tomato on top. They also last in the fridge so you can make them the night before, roll in plastic wrap and then the next morning slice up and pack in lunch boxes.
Now let’s talk about making the perfect healthy lunchbox. Add these cute pinwheels, a drink, some fruits and veggies, maybe a little pretzels or fish crackers, a Tillamook 2% Greek yogurt, and some small Tillamoo cheeses and you’re good to go! Creamy Turkey Pinwheels
Ingredients
- 2 whole wheat tortillas
- 2-3 ounces light cream cheese
- 1 Tbsp. diced green chilies drained
- garlic salt
- sliced or grated Tillamook Cheddar Cheese
- sliced deli turkey
Instructions
- Mix together the cream cheese, chilies, and a sprinkling of garlic salt. Spread onto tortillas.
- Layer cheese and turkey on as flat as you can. Tightly roll the tortillas up.
- Cut and serve right away or roll up and wrap tight in plastic wrap and place in the fridge for the following day.
