I celebrated my 12th Anniversary yesterday with my main man! Isn’t he a hottie?!
I honestly can’t believe it’s been 12 years. I remember how we met like it was yesterday…computer class in college. First day of class, I came in late, making a huge ruckus about how I couldn’t find the classroom (it was for real, NOT on my campus map) and sat in the back row. He was front and center in the room. He was wearing a blue shirt with a small Mercedes-Benz symbol (thrift store find, apparently 😉 ) blue jeans and these weird Nike sandals. I still make fun of him for those sandals, ha!
He kept turning around in his seat and looking at me during the entire class. SO blatantly obvious. I kept thinking, “He’s so hot, I bet he’s already married.” And yes, I looked for a ring and didn’t see one. Score!
After class, I was putting my things together to leave the room and he so obviously waited for me by shuffling his notebook and pencil around until we were the last two to leave. I held the door open for him and mentioned something about it being my first semester there and he said it was his too. Instantly, we connected and talked for about 30 minutes right outside the room. He invited me to go grab some dinner and of course, I accepted! He took me in his super nice new truck to the Denny’s down the street and we bonded over chicken wings. 🙂 Best. Day. Ever.
I married him about 6 months later! I was smitten with him then and still am today! I know that sounds so cheesy. I’m so happy we found each other! He’s such a great guy, fabulous dad and the best husband!
We almost got married on Valentine’s Day but I just couldn’t do it. I hate merging holidays and special occasions. I feel like every occasion deserves its own day. I’m weird like that. The end and the beginning of the year are so full of things for us, it’s crazy. My husband’s birthday in December, Christmas, my Birthday in January, our Anniversary and Valentine’s Day both in February. So many fun things packed into a few months!
Now that my Anniversary is over, I’m ready for Valentine’s Day. How do you like to celebrate? I don’t do anything really crazy, but I do love me a good dessert.
This easy blender sorbet is a dessert my husband made a few weeks ago. I was working on my bed with my laptop in my lap when he walked in with this bowl of red frozen deliciousness. He’d made it within a matter of minutes with only TWO ingredients! We shared the bowl (the perfect size for two people) and have made it several times a week since then. My Birthday and Anniversary, included.
It’s by far the easiest dessert ever! Throw some frozen fruit (we like the tartness of the frozen cherries) and Greek yogurt into a good blender. We love our Vitamix! Add in a bit of Truvia and a little milk to make it blend together and you have yourself a winner of a dessert! It’s lower calorie than a bowl of ice cream and has more protein.

Ingredients
- 1 5.3-oz container non-fat vanilla Greek yogurt
- 1 16-oz bag frozen unsweetened cherries (or other variety of fruit), softened for a few minutes at room temperature
- 2 - 2 1/2 Tbsp. milk any kind
- 1 packet Truvia sweetener about 1 tsp.
Instructions
- Combine yogurt and cherries in a good blender (I use my Vitamix).
- Add in Truvia sweetener and start with 1 tablespoon milk. Blend all ingredients together, adding a 1/2 tablespoon of milk at a time until thoroughly combined and thick & creamy.
- Pour into a bowl or bowls and enjoy!

My favorite summer recipe! I never tried it with cherry though, my preferred fruits are blueberry and rasberry. I often don’t even need to add sweetener or sugar, so it is actually a quite healthy alternative to ice-cream.

I’m with you, my husband proposed on Feb 12, and I told him (before I knew when it would happen) that he could NOT propose on Valentine’s day. I needed the separate celebration!
