I swear, sometimes I am the most uncreative person ever – especially when it comes to side dishes.
You may or may not see me right before dinner, pulling a bag of frozen veggies out of the freezer and popping them in the microwave. 😉
True story! So I’m always feeling pretty darn put together when I make a super delicious veggie side dish – that my kids will ACTUALLY EAT! Score!!
They liked this one. And so will you. It’s not only crazy easy, but it really tastes amazing.
The brown sugar gives the cooked carrots a sweetness, while the mustard makes it tangy and different. Since my boys like carrots anyway, I knew these glazed carrots would be a hit. Next time, I’m doubling the recipe because it really is that good!
It’s also a great Thanksgiving Day side dish to serve to your guests. Easy and totally delicious!
Ingredients
- 3 1/2 cups carrots steamed
- 2 Tbsp. light butter
- 1/4 cup light brown sugar
- 1/2 tsp. salt
- 2 Tbsp. prepared mustard
- parsley to top about 1 Tbsp. chopped
Instructions
- Melt butter in a medium sized bowl. Add in brown sugar, salt and mustard. Mix together and then toss with cooked carrots. Top with parsley and serve.

don’t get enough respect! Ha! Roasting them and cooking them in other dishes is great, but they don’t really get to strut their beauty!
