I’ll admit that these cookie bars came out of a complete #fail. I was actually trying to make cookies and the batter ended up being too crumbly. I was this close to throwing away the dough and starting over but it tasted delicious, and my mom taught me to not waste. 😉 So I patted the dough into a baking dish, baked it and my boys went crazy for it!

Ingredients
- 2 eggs
- 1/2 tsp. vanilla extract
- 1/4 cup Truvia Baking Blend
- 1/4 cup Truvia Brown Sugar Blend
- 1/2 cup coconut oil I didn't melt mine
- 1 1/2 cup all-purpose flour
- 1 1/2 cup quick oats
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 cup Pumpkin Spice M&M's
Instructions
- Preheat oven to 350º F. Spray an 8x8" baking dish with cooking spray.
- In a mixing bowl, blend together eggs, vanilla and Truvia sugars. Mix in remaining ingredients. Press into prepared dish.
- Bake for 20-25 minutes, until the edges are golden brown.

I love the look of these! I’ve just bought some coconut oil for the first time and have been looking for things to make, these look like winners! Unfortunately we don’t get any fun flavoured M&Ms here, so I’ll have to stick to plain chocolate ones!
