Before I married my husband, I found out one of his secrets: he has a thing for dips.
As in, salsas, dips, anything that involves dipping chips into. He can go through a jar of salsa and a bag of chips in like, 10 minutes. Boom. Gone.
I remember going to his parents house when we first met and finding a humongous bowl (I’m talking, giant, people) full of salsa in the kitchen. When my mother-in-law told me that she had made it, I was floored. We never had salsa and dips sitting around my house while growing up and I’d never ever thought about making it. Now I’m like a dip pro. I love trying out homemade versions and giving them to my dip-crazy husband to try.
This Cottage Cheese Taco Dip doesn’t sound very appetizing, right? Actually, I tried to come up with another name for it, but couldn’t get passed the cottage cheese part. I’m not a huge cottage cheese fan. It’s one of those foods you’re forced to eat when you’re on a diet because it’s so high in protein and low in carbs. Just because of that I try to stay away from it. 😉
I had a couple avocados laying around and was looking up some good guac recipes when I noticed some of them had cottage cheese in them. Since I had some cottage cheese already, I thought I would mess around with the flavors and add some healthier ingredients.
In this dip, cottage cheese is mixed with green onions, avocado, green chilies, black beans and tomatoes. Those are some of my favorite taco toppings, hence the name Cottage Cheese Taco Dip. Trust me when I say you hardly taste the cottage cheese at all! It’s almost like the binding that holds together the veggies. Honestly, this dip is so delicious. My husband and I polished off the entire bowl while we were watching tv one night. Um, that sounds gluttonous but you’ll understand when you try it. Pretty dang good for a skinny dip!
Skinny Cottage Cheese Taco Dip
Ingredients
- 1 16-oz container low-fat cottage cheese
- 1 4-oz can green chilies, drained
- 1 can black beans drained and rinsed
- 1 avocado chopped
- 4 green onions chopped
- 2 small tomatoes chopped
- 1/2 - 1 tsp. Tabasco sauce depending on how hot you like it
- salt to taste (I use about 1/4 tsp+)
Instructions
- Pour cottage cheese, green chilies and black beans into a medium sized bowl. Mix in remaining ingredients and stir together.
- Serve with chips, crackers, veggies or even just eat by itself with a spoon! Enjoy!
I have a slight problem with dips too, so I doubt this one would last long around me. Years ago I had a dip that was just cottage cheese, a packet of Ranch, and a drained can of baby shrimp. It sounds gross, but I couldn’t stop eating it! I think this dip would be the same situation except it looks WAY better!

This dip sounds great! I don’t eat it often but I like cottage cheese. Also, anything with avocado has my vote!
