Orange Vinaigrette Dressing

Happy 4th of July! I am feeling so blessed today to be able to live in the United States of America and have the freedoms that I enjoy every single day. I am unbelievably grateful for those who have died to protect those freedoms. My heart is full of gratitude today! Happy Birthday America!

In honor of this holiday, I want to share a yummy dressing recipe that is out of this world. After visiting my local farmer’s market, I had a ginormous bag of oranges and no idea what to do with all of them. I had also bought a huge bag of mixed greens, had goat cheese leftover from this recipe, and pine nuts leftover from this recipe. So I decided to whip up a little orange vinaigrette.
This dressing poured over mixed greens, goat cheese and pine nuts is to-die-for. It has just the right blend of sweetness from the orange juice and honey but a tang from the balsamic and orange zest. Definitely a winner in my house! I hope you’ll give it a try this holiday weekend! Happy 4th of July!
Orange Vinaigrette Dressing

Ingredients
  • 2 oranges, zested and juiced
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. honey
  • 1 clove garlic
  • ¾ tsp. salt
  • ½ tsp. pepper
  • ½ c. extra virgin olive oil
Instructions
  1. In a blender, add the orange juice, zest, vinegar, honey, garlic, salt and pepper. Blend until thoroughly combined.
  2. With the blender running, slowly add the olive oil. Serve immediately or pour into an airtight container and store in the refrigerator. Enjoy!
