Baked Meatballs that are some of the best ever meatballs in the history of all meatballs! Such a simple and easy meatball recipe. Very tender and flavorful!
Baked Meatballs win every time in my house, hands down. My boys LOVE them. I have zero meatball memories from when I was growing up. Maybe I just don’t remember but I’m pretty sure my mom didn’t make them. Which is fine, except my husband’s mom did and so meatballs were requested when I was newly married.
I remember the first few times I made meatballs, I cooked them on a skillet. Worst way to cook them. The oil would splatter leaving grease everywhere and you have to brown them in batches which takes FOREVER. Half the time they would fall apart just from being turned and moved constantly. But then I learned that you can bake meatballs in the oven instead! Life. Changing.
Here’s a little video to show how I put these Baked Meatballs together:
In no time, you have a whole pan of meatballs that are cooked through and ready to eat either by themselves, or thrown in sauce over spaghetti, etc. SO easy and SO quick. No more cooking meatballs in batches or standing by the stovetop! Plus, these are great to have your kids help with. My older boys love to help mix the meat and roll them into balls.
This particular Baked Meatball recipe makes the best meatballs I’ve ever had. They have so much flavor and maintain juiciness after baking. Every bite is full of flavor from the garlic, parsley and cheese. A definite winner in our house. We never have leftovers!
Best Ever (Easy) Baked Meatballs
Ingredients
- 1 pound lean ground beef
- 1/2 cup onion finely chopped
- 1/4 cup dried bread crumbs
- 2 garlic cloves minced
- 1 egg
- 1/4 cup parmesan cheese finely grated
- 3 Tbsp. ketchup
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. parsley minced (or about 1/2 Tbsp. dried)
Instructions
- Preheat oven to 400ºF. Spray a large cookie sheet with cooking spray.
- Mix together onion, bread crumbs, garlic, egg, cheese, ketchup, salt, pepper and parsley in a large mixing bowl.
- Add in ground beef and mix gently until combined. Do not overwork. Form into 1-inch balls and place on prepared cookie sheet.
- Bake in preheated oven for 15-20 minutes, or until meatballs are browned and cooked through.

This recipe is great! I wanted to share that I made a double recipe and baked them as directed. I froze them in a freezer bag after they cooled. Used them this week, they defrosted perfectly and tasted great!
Also, I was short on ketchup so I subbed with marinara sauce. I also used Italian bread crumbs because that’s what I had on hand and omitted the thyme. Delicious!

Hi Ana! I’ve never tried using ground chicken with this recipe but I would say if you do try it, freeze or refrigerate them a bit before baking them so they harden a little bit. Ground chicken is very soft and might not hold up as well as ground beef unless chilled. Does that make sense? I’m sure it would be delicious though!

YAY! So happy you like them! Okay, I would say to use dried onion instead of diced or add super finely diced onion (maybe a little less than the recipe calls for) to make them a little more sturdy. I’ve found that the bigger the onion pieces, the more they tend to fall apart. Let me know how they turn out!

Hi Britt! I find that if I don’t spray the pan enough, sometimes they stick. Also, if I don’t cut the onion up pretty fine, sometimes they fall apart a bit. But overall, we love this recipe! Yes! Place them on a parchment lined cookie sheet, not touching each other, and place them in the freezer. Let them freeze enough that you can pull them off the sheet pan and place inside a large plastic ziploc bag and they won’t stick together. Good luck!

I make a double batch freeze half and use them to make Swedish Meatballs.. I just put them in the crock pot with a can or two of cream of chicken soup, then later when its all heated together nicely serve over egg noodles with a nice tossed salad on the side. Very very good and never ever have any left overs..
I am making them tonight for Sunday dinner with my extended family. I am sure they will love it too and be very impressed.

Made these tonight…I have a picky teen who really doesn’t eat much meat but she INHALED these. Without a doubt, one of the best, if not THE BEST meatball recipe I have tried. I used a 50 pork /50 beef ground meat combination. So good and juicy. I do use extra lean ground beef! Make sure you use real onion and not granulated onion powder. I tried that once and they were so dry! Good luck and I hope you like them!

We have tried many meatball recipes so when I saw this one that said “best ever” I thought, “ oh another one that thinks they’re the best!” But they truly are! Panko breadcrumbs work, too if you have those! If not, you can break up some bread (or use the food processor to process it) and let it sit out to dry. I hope this helps!

I did not have fresh onions, used dried. Did not have fresh garlic, used 1 tsp dried. Did not have fresh parsley, used dried, did not have parmesan, used dried cheddar. The meatballs were yummy nonetheless. Clearly this is so versatile, you cannot go wrong, even with few fresh ingredients. Next time I will put half the salt though, as I don’t like too much salt. Meatballs were in oven 20 mins as my stove is old, did not know if 15 mns would be enough. They were a bit crispy at bottom. My husband loved them anyway. Enjoy.

I normally don’t post a review when there are a ton of comments already raving about a recipe, but I just wanted to let others know that I made this recipe with plant based ground beef, flax egg, and nutritional yeast instead of parm, and they were still the best I’ve ever made! Oftentimes, recipes specially made to be vegan don’t hit the mark, but taking a good solid normal recipe and veganizing works way better for me. This is the case here and I’ll make these again and again!

Loved this recipe! I used turkey meat and put in onion flakes and just a tad bit of garlic. I tripled the recipe for my father-in-laws 94th birthday party. I will be having 30 guests! I tasted them already and I am so pleased! Best meatball recipe I have ever found! Thank you!

These meatballs are a family favorite and always disappear. I do modify by using Mrs. Dash Garlic & Herb blend in place of fresh garlic & onion as kids prefer but followed rest of recipe.. Delish!

I made these with ground elk. I used gluten free breadcrumbs, 2 eggs, less onion, and 1/4 cup ketchup. The meatballs were delicious and moist which is hard to achieve with lean meat like elk.

OMG. Soooo glad I found this recipe! Absolutely delicious and so easy. And no sticking to hand or scoop. Popped them in the air fryer for 8 minutes @350. Perfect. Made quadruple batch but think I’m going to need even more next time. Again so easy, clean and quick!

I made these last night!!! They were fabulous! Just a few changes, being that I didn’t have the ingredients on hand…I used oatmeal instead of breadcrumbs, and pasta sauce instead of the ketchup. They were easy to make and SO tasty!!!!

I think most people use a recipe as a starting place and use what they have. This was a GREAT starting place. I used Panko crumbs, a little less garlic and pasta sauce instead of catsup. I added ¼ tsp each of dried oregano and basil, shaped 18 meatballs and cooked them on a parchment paper covered cookie sheet for 22 minutes. ….. and I was gentle with the mixing. They were very, very good. We will have these often. Thank you very much for sharing. I accept the compliments on your behalf.

I absolutely love this recipe!!! I am a family of 5 so I plan to use a little over 2 pounds of ground beef, do I need to double the ingredients?

Hi Lo! I have 4 boys and usually just use the one pound of ground beef and it’s enough for everyone but it depends on what you’re putting it with. But yes, you can double the ingredients if you’re using 2 pounds and they’ll turn out great. You can even freeze the extras (if you have any!)

I use a food scale to size them evenly and freeze extra after cooling. I make 1oz for pasta and 2oz for sandwiches. So good.

After reading the comments and how good they were I decided to double the recipe and exchange some things such as regular bread crumbs to Panko, used Mrs Dash Garlic and Herb along w fresh garlic and onion.
I will definitely make again real soon.

I made this tonight because I needed a quick easy recipe and have to admit I was a little skeptical adding in the ketchup but oh my was I pleasantly surprised at how amazing they turned I it! Do I newd to turn the meatballs during the cooking or just leave them be? I’m gonna find out either way shortly I used onion and garlic powder, with Italian seasoning and some grated Romano Parmesan cheese instead of bread crumbs. They are smelling amazing already
