I have zero plans for summer. Nothing. Nada.
What in heavens name am I going to do with my kids all summer?! I just spent hours pouring over summer camp catalogs and my head is spinning. I have friends that have their kids’ summer schedules completely planned out. I’m always late to the game. I do this every. single. year. And then I never sign them up for anything.
It doesn’t help that as I’m desperately pouring through said summer camp catalogs, my two youngest ones are laying all over me, laughing, kicking, writing on my papers, then chasing each other around the house screaming. Oh my.
I may be crazy for not signing my kids up for a bunch of camps but maybe it will be a good thing, right? Maybe I’ll get to spend some great quality time with them, right? RIGHT?!!
Luckily we live close by the beach and have several parks around so I’ll just fill our summer days with that?
Another plus to summer is summer fruit! Here in California, we have access to lots of fruits year round, which is awesome, but they can be pricey. I love that in the summer, you can find melons, berries, pineapple, mangoes, basically all fruits for cheaper and deliciously in season!
So to celebrate summer, I made a totally yummy fruit side dish Quinoa Fruit Salad with a Sweet Lime Dressing. This is about as easy as recipes come. Quinoa + Fruit + Lime = amazingness.
Truvia just released their newest product called Truvía® Nectar. It’s a blend of stevia leaf extract and honey and has 50% fewer calories per serving than sugar! You can add Truvía® Nectar anywhere you would use agave, sugar or honey.
Because Truvía® Nectar is twice as sweet as honey, you only need to use half as much. This is awesome news for all of you honey lovers out there! It has only 10 calories per 1/2 teaspoon (which is as sweet as 1 tsp. of honey).
This Quinoa Fruit Salad is full of yummy tropical fruit and every bite has the crunch of quinoa in it. All of that tossed in a quick 3-ingredient sweet Truvía® Nectar & lime dressing. You will not believe the flavor this quinoa fruit salad has! It’s perfect to serve alongside your next BBQ!
Ingredients
- 1/2-1 cup cooked red quinoa
- 1/2 cup blueberries
- 1-2 cups sliced strawberries
- 1 orange peeled and chopped into chunks
- 1 mango peeled and chopped into chunks
- 1-2 kiwis peeled and sliced
- 1-2 cups fresh pineapple chopped into chunks
- zest & juice from one lime
- 1 Tablespoon Truvia Nectar or to taste (or about 2 Tbsp. honey, or to taste)
Instructions
- Cook quinoa according to package directions. Cool to room temperature.
- Combine fruit in a serving bowl. Add quinoa and toss.
- Mix together zest and lime juice with the Truvia Nectar. When ready to serve, pour over fruit and toss together. Enjoy!!
