Egg & Sausage Breakfast Casserole | an easy and delicious casserole made with egg, sausage, cottage cheese & green chilies that everyone loves! Perfect for breakfast, brunch and parties.
What’s up with me and casseroles lately?? I shared Broccoli & Quinoa Casserole last week, Potato Casserole the week before that, Skinny Chicken and Broccoli Casserole right before that and then Enchilada Casserole even before that! And now this Breakfast Casserole!!!
I guess I’m learning that as a busy mom, casseroles are a necessity. I love how you can make a casserole ahead of time and throw it in the fridge until you’re ready to bake. I love that a casserole feeds several hungry kids (and a husband) and I love how easy they usually are to make.
Everyone always says breakfast is the most important meal of the day. I’m not a morning person. I need some serious caffeine and time to wake up. My favorite thing to do when I wake up is look at my favorite blogs and see what they’re posting about, while I attempt to wake up.

Egg & Sausage Breakfast Casserole
Ingredients
- 1/2 lb. pork sausage
- 1/4 cup all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1 cup low-fat cottage cheese
- 6 eggs beaten
- 8- oz shredded cheddar cheese
- 1 4-oz can diced green chilies
Instructions
- Cook sausage in frying pan and drain well. Preheat oven to 350º F. Spray a 2 quart casserole dish with cooking spray; set aside.
- In a mixing bowl, stir together flour, salt and baking powder into cottage cheese. Add in eggs and then cheese. Stir in chilies and sausage. Pour into prepared baking dish.
- Bake for 45 minutes. Cut into squares and serve. Enjoy!

I love breakfast casseroles, Jen! I could probably eat them every morning….although I’m not a huge morning person, I AM a huge breakfast person! Ha!!
I love the sausage and egg bake! I was wondering if this could be made the night before and baked in the morning?
I’ve never tried it but I’m pretty sure it would be just fine as long as it’s covered and kept cold overnight. It might need to bake a few minutes longer than stated on the recipe. Please let me know how it turns out if you do make this the night before!

How did it turn out after you prepared the night before and baked the next morning?
I always fix two the night before and put one in the freezer (for another time or to take to a friend) and another one in the refrigerator for the next morning. Also, my dh and I like a little spice in ours but my grandson does not…sooooo,,,LOL I take one or two cans of rotel..blend it down..and add. He likes it and my dh and I get a great flavor added. Oh yea, I go ahead and cook both so no one has to do anything except put theirs in the oven and go get dressed for church or work.

Hi, Could I use ricotta cheese instead of cottage cheese? To make a 9X13 do I double this recipie? How long would I bake it for if doubled recipie?
Hi Sharlene! I haven’t tried using ricotta cheese in this. I like that the cottage cheese gives it some extra moisture. If you do try it, let me know how it turns out! As far as doubling the recipe, I would bake it for 45 minutes and then keep checking it. The middle of the casserole will be set when it’s done. It really depends on your oven, too.
