Mom’s quick and easy breakfast muffins – a family favorite muffin recipe that is easily whipped up in minutes!
My mom was the breakfast queen when I was growing up. She always made sure we ate something delicious before school every day. These muffins are one of her favorite quick and easy breakfasts. She’s been making this recipe for years.
Back when she was a young college student, she would make these muffins for her roommates for breakfast. They’re a favorite because not only are they absolutely delicious, but they have only a few ingredients and use one bowl and spoon. Double score!
This recipe is so basic, anyone can make it. I bet you have all the ingredients already in your pantry. These are the best muffins to make on a busy morning because they only take 5 minutes to put together and throw in the oven.
You can put the extras in a sealed container and then for a super quick breakfast, heat them up one at a time in the microwave for a few seconds. Breakfast to go! These seriously are so easy and a family favorite. Enjoy!
Ingredients
- 2 cups flour
- 1/2 cup sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 2 beaten eggs
- 1/2 cup oil
- 1/2 cup milk
Instructions
- Preheat the oven to 400º F. Line a 12-cup muffin tin with paper liners or spray each cup with cooking spray. Set aside.
- In a mixing bowl, combine flour, sugar, baking powder and salt and stir together. Add in eggs, oil and milk and mix only until combined, don't beat or overmix!
- Scoop into prepared muffin tin and bake for 15-20 minutes or just until golden and tops spring back when you press on them. Keep in sealed container . These are great served with butter and jam for a quick breakfast!

These look great! Is it ok to sub almond or coconut milk for the milk? We cant have the dairy.
Hi Karla! I haven’t tried this recipe with almond or coconut milk but I’m thinking it would be just fine. If you do try it, let me know how they turn out!
I have subbed unsweetened almond milk into the recipe and the results are equally delicious. They can also be made with 1 1/2 cups whole wheat flour to make a denser, more filling muffin.

do you think you could substitute melted butter for the oil to give more flavor? How about adding things in such as choc chips?
Do these freeze easily? Thinking about sending these for my little one on days they have muffins for breakfast, instead of the horrible prepackaged ones full of chemicals and fillers.
