This is the BEST EVER Easy Butternut Squash Soup! Only a few ingredients to make this incredible soup. This is one of our favorite soups to make on a cold day! (Vegetarian, gluten-free, paleo and clean eating)
This last week has been amazing for me. I celebrated my Birthday last week and then celebrated my 14 year Wedding Anniversary yesterday! Time flies by so quickly! I was looking through my wedding pictures and we looked like babies! We didn’t really celebrate yesterday but will hopefully do something fun this weekend.
I feel like I haven’t gotten any older. I still feel about 18 years old. 😉 But then I think about the fact that I have a son who will be getting his drivers permit in a few months and I can’t even believe it! Like, where in the heck did the time go?! And how in the world am I old enough to have a son that’s that old!
Even though I’m officially an old lady, I’m finally going to go on my very first cruise! My husband and I just booked a cruise for Spring Break for the whole family! I am so super excited but also nervous. We decided to book a short 4 day Mexico one because I wasn’t sure if we would like it. I feel like some people love cruising while others don’t like being stuck on a ship for the majority of the time. Any tips on cruising would be appreciated!
So as soon as we booked the cruise, my husband announced that we have two months to get in “cruise shape”. 😉 I’ve mentioned before that we’ve been meal planning and eating healthier. We usually spend a few hours during the weekend prepping all our meals and packing them for the week ahead. One way that I love getting extra veggies into our diets and love to use for meal prepping is soup.
I think soup is so underrated but it shouldn’t be! This Easy Butternut Squash Soup is one that I’ve made several times and it’s my absolute favorite soup ever!! It’s so easy to make and only has a few ingredients. I do hate peeling and chopping up the squash but you can buy it already pre-chopped in the produce section if you really want to make this Butternut Squash Soup even quicker.
All you have to do is sauté a chopped onion and minced garlic in a little bit of oil. Add in diced butternut squash and vegetable broth and cook until softened. We use our Vitamix Blender to blend it all together and add a little salt and BAM. Soup’s on! If you like the flavor of butternut squash, you will love this Easy Butternut Squash Soup!
Easy Butternut Squash Soup
Ingredients
- ½ Tbsp. olive oil
- 2 garlic cloves minced
- 1 onion diced
- 1 butternut squash peeled and diced into cubes
- 32 ounces vegetable broth
- 1-2 tsp. salt
Instructions
- In a dutch oven pot (or heavy pot), heat olive oil over medium heat. Add onion and garlic. cook until softened, about 5 minutes.
- Add cut up butternut squash and vegetable broth. Bring to a boil then cover and simmer for 15-20 minutes until squash is softened.
- Carefully pour entire contents of pot into blender (I use my Vitamix). Add salt.
- Carefully blend until smooth. Serve in bowls with thyme if desired. Enjoy!

If I purchase precut squash, about how many cups or what weight of squash would correspond to the amount needed for this soup? Looks delicious.
It took about 2-2.5 pounds of squash, or one somewhat large one. “Souper” easy and delicious! I have never eaten butternut squash soup before, but I will eat it frequently now.

Made this for the second time tonight, and it was better than the first. My homemade veggie broth that I used this time around was a bit more flavorful, and so the soup was just that much more tasty. I have to avoid onions due to migraines so I used shallots along with the garlic. Also added a small amount of organic coconut milk as I was blending at the end, and it elevated the creaminess. SO GOOD. I see myself making and eating this soup a lot during the cold Winter months ahead. Thank you for sharing your recipe with us 🙂

Madden this super easy butternut squash soup. I added 1/4 cup milk & tsp of corn starch to thicken . And added nutmeg for more flavor. So yummy!!!
I make this in the slow cooker. (Sautee veg. 1st) than add veg broth or chicken stick. just set on high or low depending on how quickly you want it done. I also added a bit of red pepper flakes to add some spice to it. Creamy and delicious. Easy.

This soup looks so lovely. I have an older model vitamin without the soup preset, but bet it would still be fantastic blended and then warmed in a saucepan. Delicious.

This was delicious! I substituted vegetable broth (I was out of it) for a little more than a cup of water and chicken stock and the flavor was also just as good. I love this savory soup on a cold day!
