Have you jumped on the kale train yet, guys? I HAVE!
I always have a bag of chopped organic kale in my fridge and I love adding it to salads and smoothies. (Check out this recipe and this recipe – yum!) But…have you ever made kale chips??
I know it’s not a new concept, but I wanted to give it a try and see if I liked it.
Verdict? I was shocked at how yummy they were! And addicting! They’re crispy, crunchy and salty. They’re totally easy to make. A perfect snack to grab when you get the afternoon munchies and want something chip-like. Plus kale is full of fiber and antioxidants so you’re getting a huge health boost!
Ingredients
- 1 bag chopped kale or one bunch kale, stems chopped off and cut into medium-sized pieces
- olive oil about 1 Tbsp.
- coarse salt to taste
Instructions
- Preheat oven to 350 degrees F. Cover a large baking sheet with tin foil or parchment paper. Place chopped, dry kale leaves on baking sheet and pour a light drizzle of olive oil over the top (amount of olive oil depends on amount of kale used. You don't want too much but you want every kale piece lightly covered). Toss lightly with a spoon or use your fingers to distribute evenly. Sprinkle coarse salt over the kale and again, toss until equally distributed.
- Bake in preheated oven for 10-15 minutes, being careful not to burn the leaves. When edges are brown and crispy, take out of the oven and let cool before devouring. ENJOY!!
