Guess what I did this weekend?! I spent 3 nights away with my hubby and NO kids!!!
My mom flew over from Arizona and watched all 4 of my boys so that we could have a little break. My husband rented a nice room at the Temecula Creek Inn in to celebrate my Birthday, Valentine’s Day and our 10 year Anniversary. We layed out at the pool, shopped, ate out and just enjoyed each other’s company. It was SO NICE. I didn’t have to worry about dishes, fixing dinner, baseball practices, laundry, play dates…nothing but myself and my husband. Ahhh. It was SO relaxing! Thanks Mom!!! 🙂
Second to my husband, comfort food is my next best friend. 😉 I love a filling, comforting, warm meal at the end of the day. The best part is when I only have to cut up a few vegetables and some meat and throw it in a crock pot and not think about it for hours. The house smells amazing throughout the day and I have a home-cooked meal for my family at dinner time.
Have you ever made chicken and dumplings in the crock pot? I’ve tried several different recipes, most of which have refrigerated biscuits cut up and put on top for the dumplings. But honestly I prefer actual biscuits on the top. This recipe uses baking mix and milk instead of refrigerated biscuits. It’s a really easy recipe and is seriously sooo delicious. Try it for dinner this week and let me know what you think!
Slow Cooker Chicken & Dumplings:

Ingredients:
- 1-1/2 lbs. boneless skinless chicken breasts, cubed
- 2 stalks celery, sliced
- 1/2 onion, chopped
- 2 medium potatoes, cubed
- 3 carrots, sliced
- 2 (10.75 oz) cans condensed cream of chicken soup (natural or 98% fat free work great)
- 1 cup water
- 1 tsp. dried thyme
- 1/4 tsp. black pepper
- 2 cups all-purpose baking mix (such as Bisquick)
- 2/3 cup milk
Directions:
- Place chicken, celery, onion, potatoes and carrots in a large slow cooker.
- Stir the soup, water, thyme and pepper in medium-sized bowl. Pour the soup mixture over the chicken and vegetables.
- Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours or until chicken is cooked through.
- When cooking time is up and the chicken is cooked through, stir the baking mix and milk together in a small bowl. Turn the heat on the crock pot to HIGH (if not already). Spoon the batter over the top of the chicken mixture. Tilt the lid to vent and cook for 30 minutes or so, or until the dumplings are cooked through and no longer doughy.
