Greek Tomato Salad – a healthy salad sans lettuce that is fresh and full of flavor!
Kids are not the only ones who have a hard time eating their veggies. I adore fruit but put a veggie in front of me and I have to make myself eat it! My older two boys are actually pretty good at eating their vegetables. My nine-year old will usually eat vegetables over fruit (what the heck?!).
Now, it’s no secret that I am not a salad person. We’ve talked about this before. But I’m finding out that most salads are not created equal. There’s those boring salads with wilted lettuce and watery dressing or…there’s Greek Tomato Salad!
I remember when my mom used to slice up tomatoes and put salt and pepper on them and try to serve them to us with dinner. I hated them! They were slimy and weird. Now as an adult, I love tomatoes!
And I love Greek food. I made this greek salad not long ago and it’s one of my favorite green salads, which says a lot coming from this girl. But greek tomato salad? It’s like manna from heaven! This is the EASIEST way to eat those veggies because holy cow, they taste amazing!
In a nutshell, the salad combines tomatoes, cucumbers, green onions, olives and feta cheese with the most amazing light oil dressing. I’m not lying to you when I say that I ate the entire salad by myself after I took pictures of it. Greek Tomato Salad? It’s Jen approved.
Greek Tomato Salad
Ingredients
- 4 medium tomatoes cut into 8 wedges
- 1/2 of a cucumber peeled, halved and sliced
- 1/4 cup sliced green onions
- 8 kalamata olives sliced
- 3 Tbsp. low-fat feta cheese
- 1/4 cup red wine vinegar
- 2 Tbsp. olive oil
- 1/4 tsp. garlic powder or 1 clove garlic, minced
- 1/2 tsp. oregano
- 1/4 tsp . basil
- 1/8 tsp. sugar
- 1/8 tsp pepper
Instructions
- Combine tomatoes, cucumber, green onions, olives and cheese in a medium sized bowl.
- In a small bowl, whisk together vinegar, oil, garlic, oregano, basil, sugar, salt and pepper. Pour over vegetables and toss to coat.
