Airy, fluffy, light and creamy lemon Jello mixed with pink lemonade and whipping cream. Amazing texture and flavor!
I love Jello. There. I said it.
When I was a kid, my mom made Jello salads all the time and it was always my favorite part of dinner.
It felt like dessert to me. I loved it!
However…
If you know me at all, you know that I despise most things lemon.
Including lemon bars, lemon meringue, or lemon glazed whatever. Yuck! You will probably never see a lemon bar recipe on this blog unless someone specifically asks me to post one and I happen to be handed an amazing recipe that I HAVE to share. On the list of non-hated lemon items are pink lemonade and fresh lemons…yes, I’m strange.
Anyway, I was scanning through an old cookbook when I saw this recipe. I noticed it had pink lemonade in it and wanted to try it but it also calls for lemon Jello. Ick. I was thinking it might be too much lemon for me but decided to give it a go anyway. And you know what? The ending outcome was really tasty! And strangely addicting. One bite and you have to have another. And another. It’s airy, light, and fluffy yet is creamy at the same time. The texture is awesome. I know it looks like scrambled egg and I totally struggled to get a decent picture so you wouldn’t take one look at it and go running, but everyone loved it. Pretty sure I’ll make it again. And maybe branch out and try another lemon recipe?

Ingredients
- 1 6-oz pkg. lemon Jello (I used sugar free)
- 3/4 c. sugar
- 1 pinch salt
- 2 c. boiling water
- 6 ounces half a container frozen pink lemonade concentrate
- 2 c. 1 pint whipping cream
Instructions
- Combine Jello, sugar and salt in a medium sized bowl. Add the boiling water; stir until Jello is completely dissolved.
- Add the lemonade concentrate. Chill until slightly set (like egg whites). With a hand mixer, whip to froth.
- Whip the whipping cream and fold into frothy Jello. Let set up in refrigerator. Scoop into bowls. Extra yummy paired with fruit. ENJOY!!

It looks kind of like a thicker mousse. I would be interested to try this…on a side note, I can’t believe you don’t like lemon! I am the complete opposite! I am a citrus freak! LOVE lemon & lime anything! YUMMY!
