Unbelievable Low-Fat Pumpkin Cookies with only THREE ingredients! So easy to make and are moist and delicious. Perfect pumpkin cookie to celebrate the holidays while still watching your figure. 😉
I can’t decide on what to have my kids dress up as for Halloween. I have a ton of costumes already that my older boys’ wore that they want nothing to do with.
Spiderman’s muscles are “too tight”. Skeleton guy costume is “too scary”. Army guy suit is “too big”, etc, etc.
So I took them to Target to check out the costumes and ended up chasing them around while they played with all the props. Specifically the large swords that make noise when you swish them around and the annoying lightsabers. Mom fail.
I think I’m going to just buy them a light saber and let them trick or treat in a t-shirt and jeans. Would I be a bad mom? I’m just so over the fighting to get them to wear a dang costume!
Actually, I asked you all on Facebook for some costume advice and you had some great ideas. Thank you!! I feel like my brain has already moved onto to Thanksgiving though…
And pumpkin. I love all things pumpkin.
These pumpkin cookies are the bomb. My sister has used this recipe for years and I had to share it with you. It’s so easy! Only three ingredients, too. Can’t beat that. They’re soft, moist and so yummy. Plus, they’re low fat! So you can eat like five of them and not feel too guilty! That’s my way of looking at it.
Low-Fat 3 Ingredient Pumpkin Chocolate Chip Cookies
Ingredients
- 1 spice cake mix
- 1 15-oz can pureed pumpkin
- 1 cup mini chocolate chips
Instructions
- Preheat oven to 350 º. In a medium sized bowl, mix cake mix and pumpkin together. Fold in chocolate chips.
- Place on greased cookie sheet (I use a cookie scooper) and bake in preheated oven for 12-15 minutes. Let cool for a few minutes on the cookie sheet then take off onto a wire rack to let cool. Enjoy!
These look really yummy! I pretty much love pumpkin anything so I am definitely pinning these! So easy too!

These pictures are stunning! And this recipe looks pretty awesome. 🙂
I make muffins with almost this exact same recipe! 🙂 I’m definitely going to pin this one!
My boys have always loved the prop area for Halloween and I always get suckered in to buying them. But then they’re never even used for Halloween!
I love how easy these cookies are… and low fat!
Low fat and only 3 ingredients!? I’m sold. These look delicious. 🙂
We always used to dress up as a kid, but it seems like many kids aren’t into that. They just want the candy. Can’t say I blame them …love candy. 😉

I love the simplicity of this recipe! Made some pumpkin chocolate chip cookies before and they never turn out as moist as I want… but these look like they would do the trick! Thanks for sharing!!
I love how easy this is to make. I love spice cake. This sounds like something I may have to try for sure. Thank you for sharing.
I make these all the time but I put them in mini muffin tins. My 4 yr old loves baby cakes. FYI 3 mini muffins or one regular size muffin (without chocolate chips) is only 1 WW + point.
I can’t get spice cake in a gluten free cake mix. I was wondering if I get yellow cake mix (gf) and just add the spices
if it would taste the same.
I would use the same spices that I did for pumpkin pie.
Ant suggestions.
It might just work, Cecelia! Let me know how they turn out!
I always have a hard time finding spice cake, so I use carrot cake. It comes out great!
So nostalgic. My mom used to make these and I’m pretty it was almost the same recipe. Glad to see it again. 🙂
Yay! So glad you stopped by, Isaac!
