If you’re new to YHE, you may not know that I’ve never been much of a salad lover until recently. I’m not sure what turned me off to salads before but lately I eat at least one salad a day, I love them so much!
My new favorite thing to do, is make homemade dressings with my blender. Have you ever done that before? It’s really quick to do and saves lots of money! Store bought dressings can be expensive.

There’s something about a homemade dressing. It just tastes better. I have a few favorites that I make a lot like this greek salad with homemade dressing, an orange vinaigrette and one of my new favorites, basil vinaigrette.
But I’ve never made a poppyseed dressing before now! What I love about this dressing is that it’s sweet with a tang to it, too. I love the added shredded red onion in this. It gives the dressing a slight pink tint and a light onion flavor. I used Truvia in place of sugar to cut the calories. This dressing really couldn’t be any easier. Throw the ingredients in the blender and DONE.
This poppyseed dressing is even better poured over this salad. You guys, I’m not lying to you when I say this is probably the best salad I’ve ever had! It has all of my favorite things built into one salad.
As soon as I was done taking these pictures, I wolfed it down so fast. The flavors and textures of the fruit with the spinach and poppyseed dressing is incredible. And you can never, ever go wrong with a little goat cheese or candied walnuts! If you try one salad from YHE, try this one!!

Spinach Salad with Strawberries, Peaches, Candied Walnuts, Goat Cheese & Poppyseed Dressing
Ingredients
Dressing Ingredients:
- 2 Tbsp. Truvia Baking Blend or 4 Tbsp. sugar
- 1 tsp. grated red onion
- 1/3 cup white vinegar
- 2/3 cup canola oil
- 3/4 tsp. ground mustard
- 3/4 tsp. salt
- 1 tsp. poppy seeds
Salad Ingredients:
- 2 Tbsp. Truvia Baking Blend or 4 Tbsp. sugar
- 1/2 cup walnut halves
- 2 cups fresh baby spinach
- 1/2 peach sliced
- 1/2 cup sliced strawberries
- 1-2 Tbsp. crumbled goat cheese
Instructions
- Combine all of the dressing ingredients except the poppy seeds into your blender. Blend until combined. Pour in poppy seeds and pulse to incorporate.
- In a small pan, stir together 2 Tbsp. Truvia and walnut halves over medium heat. Stir constantly until sugar melts and sticks to the nuts. Be careful not to burn! Pour onto parchment paper to cool.
- To assemble your salad, layer spinach in bowl(s) and top with sliced peaches, strawberries, goat cheese, and candied walnuts.
- Drizzle your homemade poppyseed dressing over the top. Serve and enjoy!
The salad and all the different dressings look wonderful. These are sooooo much better and healthier than store bought.
I make something similar but with a balsamic dressing and feta. This looks beautiful!
