I wanted to post this yummy agua fresca recipe yesterday but I had to recover from my weekend. And no, I’m not a crazy partier. But I do have four boys. It’s crazy town in this house. Especially on the weekends.
You know how most people are like “YES! It’s Friday! Time for some relaxation!”
I’m over here going, “Nooo! Not the weekend!”
Not that some weekends aren’t fun and relaxing, but with two out of four boys in baseball right now, we have two games every Saturday (always at different parks at different times and my oldest’s are just about 3 hours long!) plus practices on Sunday as well as church. Then there’s always a random Birthday party to go to, baby shower, etc.
This last weekend we had a baseball practice & football pre-season party on Friday after school, then two baseball games (which just about spanned the entire Saturday), church on Sunday and we hosted a church get together that night at our house. So busy!
The plus of the weekend? We were invited by one of my husband’s old work acquaintances to go to the Clipper’s game 4 of the playoffs – it was so fun!
We got to hang out in the suite and watch the Clipper’s play a great game, right up until the end when they won by two points! So our weekend was busy – but fun, too. 😉 (Isn’t my guy the cutest?!) Also, kids are a LOT of work but SO worth it!
But back to this agua fresca recipe… I made these with my boys between baseball games. Have you ever made an agua fresca? They are so easy and refreshing.
I had strawberries in my fridge so I blended them up, added some of my standby sweetener, Truvía®, strained out the seeds then added lemon-lime soda. Quick, easy and perfect for a hot afternoon, Cinco de Mayo, or just about any other day of the week. Enjoy!
Ingredients
- 2 cups strawberries hulled and cut into chunks
- 1/4 cup Truvía® natural sweetener
- 1 cup water
- 3 cups lemon-lime soda
- lime for serving - optional
- mint for serving - optional
Instructions
- In a blender or food processor, mix strawberries, Truvia and water.
- Pour mixture into a fine strainer to get rid of seeds.
- When drained and rid of seeds, pour strawberry mixture into a pitcher. Add in lemon-lime soda and limes & mint if desired.
- Pour into glasses and serve with ice. Enjoy!
Notes
*Can also refrigerate strawberry mixture prior to mixing with soda.
