Let’s give a little recap of the last two Simple Summer Series recipes I’ve shared with you: The BEST Easy Lemonade Recipe and Avocado Chickpea Salad Sandwiches. Both are two of my favorite summer recipes!
But this last recipe? YUM. I had to share a dessert. One that’s summery and easy. Tropical Trifles!
These individual desserts remind me of Hawaii. I just got back on Saturday from Kona and had the time of my life!! It was just my husband and I, no kids = bliss!
While I was there, I had this pineapple spongy cake with coconut that was to die for. I wanted to recreated it but in order to make it a little less caloric, I decided to make it into a trifle.
I used pre-bought angel food cake and added layers of strawberries and pineapple, with a little bit of coconut and cream of coconut, for good measure. If you haven’t ever bought cream of coconut before, you can find it in the liquor aisle at your supermarket. It’s used a lot in pina coladas and other desserts.
These little trifles are perfect for squeezing every last bit of summer out of the month of August! I’m so happy to have been a part of this Simple Summer Series. I hope you enjoyed all of the amazing posts from it! Now grab this recipe then enter to win that Visa card!
Individual Tropical Trifles
Ingredients
- 1/2 angel food cake cut into cubes
- 1 cup strawberries diced
- 1/2 cup flaked coconut
- cream of coconut found in the liquor department at your store - NOT coconut milk!
- 1/2 8-oz container Lite Cool Whip
- 1 cup pineapple tidbits drained
- Maraschino cherries for topping
Instructions
- In your serving dishes, layer some of the cubes of angel food cake, then some strawberries.
- Sprinkle with coconut then drizzle with some cream of coconut. Now add a dollop of Cool Whip. Repeat the layers but use pineapple instead of the strawberries. End with Cool Whip and then top with a Maraschino cherry!
- Repeat in all the dishes. This will make approximately five individual servings, depending on how big your glasses are. Can double or triple if making a large amount!
- (Measurements are approximate - add more or less as needed!)
My husband would absolutely love these — and his birthday’s in a couple weeks! I’ll definitely have to pin these for later 🙂

Welcome back from Hawaii! I’m so glad you are using the coconut flavors – that and pineapple are pretty unbeatable together. The trifles are so cute and easier to prepare, and let’s be honest, eat, too 🙂 I’d take two or three of these!
This sounds wonderful! I have a PInterest board that is titled “Coconut Lovers Unite”, that is how much I love anything with coconut! I have added this to my recipe file and will definitely be making this! I love that you have had it for dessert 2 nights in a row! Fun!
