What’s better than french toast? Blueberry French Toast Casserole! Delicious casserole with cubes of bread and blueberries baked in an egg and orange juice batter. SO good!
Can I just tell you of my obsession with blueberries for a minute?
- They were $1.50/carton this last week (yeah, baby!)
- They have the most amazing color when they’re cooked (maybe should be called purpleberries?)
- And they are so flipping good!!!
They were also one of the ten ingredients on the Mystery Dish Challenge this month. Mary Frances from The Sweet Tooth Life put together a fab list of ingredients:
1. Clams 2. Ramen noodles 3. Blueberries 4. Heavy whipping cream 5. Chocolate chunks 6. Potato chips 7. Kale 8. Almond butter 9. Chiles 10. Orange juice
What would you have made?
At first I wanted to make a smoothie using kale, almond butter and blueberries. But I randomly saw a french toast casserole picture on pinterest and I thought, dude. That looks freaking good.
My little brain started thinking of ways to incorporate three ingredients into such a dish, and the rest is history.
Not to brag, but this blueberry french toast casserole is absolutely to-die-for. Obviously I’m a carb lover. That’s been established. This french toast casserole is a carb-lovers dream come true.
And it has fruit and eggs in it, so it’s totally breakfast food, right?
My pictures do not do this casserole justice. The flavor of it is out of this world. The top bread is crispy, while the bread at the bottom has the exact texture and taste of french toast. It almost has a custardy feeling to it, without being soggy.
The orange juice and bit of heavy cream in the egg mixture makes it stand out as a bit different from most french toast casseroles. Not to mention the blueberries sprinkled throughout. I love biting into a cooked blueberry! That pop and flavor from them is so delish.
Seriously, this makes such a delicious breakfast. Perfect for Easter morning… or really any morning!
Ingredients
- 6 cups white bread cubes I used french bread
- 4 eggs
- 3/4 cup milk
- 1/4 cup heavy whipping cream
- 1/2 cup orange juice
- 2 Tbsp. Truvia Baking Blend or 4 Tbsp. granulated sugar
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- 1 cup fresh blueberries
- 1 Tbsp. light butter
- whipped cream for topping
Instructions
- Preheat oven to 350ºF. Cut bread into cubes and spread into an even layer on cookie sheet. Place in preheated oven for 10 minutes, until toasted. Pull out of oven and set aside.
- Combine together eggs, milk, cream, orange juice, sugar, salt and vanilla in a bowl and whisk together.
- Place toasted bread cubes into a 2 quart casserole dish. Toss in blueberries.
- Pour egg mixture over the top and let sit 10 minutes. Place little pats of the butter over the top of the casserole and place in oven.
- Bake for 45 minutes in 350ºF oven. Serve in dishes with a dollop of whipped cream on top. Enjoy!
