Okay. I have to admit something. Sometimes I eat my kids’ snacks.
Like on my way home from a tough workout or maybe a tough shopping session ;)… I have to admit that I sometimes grab a handful or twelve of my boys’ fishy crackers. Am I alone in this?!
It was getting pretty bad and I needed an intervention. So I raided my many folders of recipes to find some healthy snack ideas and I found a cutout from a super old Shape magazine. On it was a simple recipe for baked chickpeas and I fell in love! Just bake some canned chickpeas in the oven, then toss in some seasonings and snack away! How awesome is it that this little high protein & fiber bean transforms into a yummy, crunchy and healthy snack?! You can also toss a few of these crunchy babies onto your favorite salad to add some protein. Seriously, if you’re like me and guilty of raiding your kids snacks, then consider giving this recipe a try!
Ingredients
- 1 19-oz can chickpeas, well drained, rinsed and patted dry
- olive oil spray
- 1/8 tsp. cayenne pepper or more to taste
- 1/8 tsp. garlic powder or more to taste
- 1/4 tsp. dried oregano or more to taste
- coarse salt to taste
Instructions
- Preheat oven to 450 degrees F. Line cookie sheet with parchment paper. Place chickpeas on cookie sheet and bake, shaking every now and then until golden brown and crunchy - about 35-40 minutes.
- Pour fresh-from-the-oven chickpeas into a large bowl. Lightly coat with olive oil spray. Add cayenne, garlic powder, oregano and salt. Toss to coat evenly. Serve immediately or let cool completely before storing in a resealable container. ENJOY!!

I have tried making these before but they never came out crunchy! Well, straight out of the oven they were, but after 5 minutes they became soggy and soft. Do these stay crunchy when you store them?

Thanks for the explanation on how to make them crunchy. I thought I could make these without a recipe, but I was wrong! Marinated chickpeas = not crunchy. Did yours shrink in the oven?
