Oatmeal S’mores Cookies – super moist and chewy oatmeal cookies with graham crackers and chocolate pieces inside and an ooey gooey marshmallow cooked on the top!
Well, we’ve come to the end of S’mores Week.

Not sure if I mentioned that I was ON the Rachael Ray Show last Friday?!?!
Okay, it wasn’t like an amazing segment where I got to actually meet Rachael Ray and cook with her or anything.
BUT I did get to film a little clip for her burger show and they aired it on live TV!! Cool right?!

There’s something about a soft, moist, chewy oatmeal cookie. But add in graham cracker crumbs, chocolate and then a melted marshmallow on the top?!!
Wow. Just wow.
My boys looooooved these cookies. They’re easy to make but look fancy. Perfect to bring along to a BBQ, picnic or party!
Oatmeal S'mores Cookies
Ingredients
- 1 3/4 cups quick oats
- 1 1/2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1 cup crushed graham crackers
- 1 cup packed light brown sugar
- 1/4 cup Truvia Baking Blend or 1/2 cup granulated sugar
- 1/2 cup coconut oil
- 1 large egg
- 3/4 cup applesauce
- 1/2 cup semisweet chocolate chips
- 18 large marshmallows cut in half
- 1/2 cup Hershey's milk chocolate bar cut up
Instructions
- Preheat to 350º F. Spray one or two cookie sheets with cooking spray.
- In a medium bowl, combine oats, flour, baking powder, baking soda, salt, cinnamon, and graham crackers. Mix well with a wire whisk and set aside.
- In a large mixing bowl, combine sugars. Then add coconut oil until blended. Now add applesauce and mix and then the egg and blend until smooth.
- Add in the flour mixture and blend only until just combined. Add in chocolate just until incorporated. Don't overmix!
- Drop dough by tablespoon onto prepared cookie sheets, 2 inches apart. Bake for 10 minutes and then pull cookie sheet from oven. Place a half of marshmallow on top of each cookie and then place in the oven for another 3-5 minutes.
- (The marshmallows tend to slide off the cookies at the end of baking. I found that putting a slight indentation in the top of the cookies before baking helped keep the marshmallows from sliding off as much.)
