This Coffee Cake in a Mug is so easy to make and takes only a minute in the microwave. Quickest breakfast ever, and conveniently in a mug!
I’ve created a mug cake monster. Um, me. I am seriously so obsessed with mug cakes now.
It’s been a while since I’ve made one but I decided to try a mug cake recipe I found in a magazine awhile back and found it incredibly dense and practically inedible. Well, perfectionist that I am, I couldn’t leave it alone.
I decided to try using Bisquick instead. I love Bisquick because it already has all the rising agents you need, so you don’t need to add in baking powder or baking soda.
I took my Mom’s Easy Coffee Cake Recipe and sort of whittled it down to fit inside a mug.
I can’t believe how light, fluffy and flavorful it turned out! It only took one minute to cook in the microwave and mixing the ingredients in the mug is so easy.
I added a yummy streusel-type topping and even did a quick swirl to mix it throughout the cake. My mug here in the picture is pretty big so I doubled the recipe and it still turned out great.
This is a great idea for a quick breakfast on the go. Or to enjoy slowly on a Saturday morning! 😉 Happy Friday!
Ingredients
- 1/4 cup Bisquick mix
- 2 Tbsp. milk
- 1/2 Tbsp. Truvia Baking Blend or 1 Tbsp. granulated sugar
- 1/4 tsp. vanilla extract
- 1 tsp.coconut oil melted
- 1 Tbsp. brown sugar
- 1/4 tsp. ground cinnamon
Instructions
- Lightly spray a microwavable mug with cooking spray and then mix together Bisquick, milk, Truvia, vanilla and coconut oil inside.
- Mix together brown sugar and cinnamon and sprinkle over the top of the mixture in mug.
- If desired, swirl with the tip of a knife to spread throughout the mug.
- Microwave on high for one minute. Carefully take out of the microwave and devour. Enjoy!
What a great idea! I love that you can have coffee cake without making the whole thing.
I made this tonight – I was hungry so I doubled it in a big soup mug.
I didn’t have coconut oil, but I added some melted butter on top of the swirl, and a couple fillips of sour cream in the batter. Really yummy!
I’m so glad you liked it!!
One minute is all what I have, Jen! Hope your cake is as delicious as it looks cause I’ll try it today 🙂
What a great idea to use baking mix! I ADORE coffee cake, so this will be great for portion control
This sounds great, I don’t have coconut oil….. what else could I use ??
You can sub canola or vegetable oil for the coconut oil. I hope you like it!
What a quick & easy dessert on a busy day, and yet it also sounds very tasty! I don’t have any coconut oil on hand, so can vegetable or canola oil be used, instead? (I’m only giving it 4 *s because I have not yet made this), but it sounds scrumptious!
Yes! You can sub vegetable or canola oil. I hope you like it as much as we do!
I usually don’t think I’m a fan of mug cakes, Jen, but this one looks irresistible! Great job!
Oh my, this was delicious!! Thank you! 5 stars!!!

Oh my goodness! This is spot on! All of the flavors come together perfectly. This is going to be my new “go to” late night sweet craving! So simple and fast! Thank you! ? 5 stars!
Woot woot!! Thank you Tiffany! It’s so flipping good!
Is Bisquick NEEDED?
Yep, it’s in the recipe – 1/4 cup. I haven’t tried making it without Bisquick.
This was easy and DELICIOUS! I have no sweets in the house and was craving something sweet. I did not want to go out of the house. I used melted butter instead of the coconut oil and sweet n low for the truvia. Thank you so much!
I’m SO happy you liked it, Elaine! Thank you for the comment!!
This was very very good. I didn’t have vanilla so I used Almond extract. I used a heavy bottom mug the first time and the bottom got a little dry – using a regular flat bottom mug made a huge difference. Can’t wait to try it with the vanilla in it! Thank you!
Yay! I’m so happy you liked it!! Thanks for taking the time to comment!
This is the best mug cake I’ve ever had! Every other one I’ve tried was too dense or just tasted awful. Not this one, it’s delicious and totally satisfied my cake craving.
Thank you Amalia!! I’m so happy you liked it!
So moist and tasty. Will definitely make this one again.
I’m so happy you liked it!!
do you melt the coconut oil?
Yes!! Thank you for pointing that out, I updated the recipe to show it. I hope you’ll try it!
I make this every morning, its delicious! Absolute perfection!
Thank you, Myles!!
Exactly what I was looking for- an easy mug cake that can be enjoyed any time. This can be a breakfast, snack or dessert! Perfection!
