Today is a huge day for me. My oldest is heading to high school and my youngest is going to kindergarten!!!!
All the emotions. All. of. them. I’m crazy nervous, excited, happy and really sad. I’m excited for my oldest to experience high school (when in the world did I get old enough to have a kid in high school?!?!) but I’m also nervous for him. I know he’ll be okay but I’m hoping things go smoothly for him. I’m crossing my fingers he’ll let me take an actual photo of him on his first day. 😉 He has so many fun days in his future. I’m really excited for all that lies ahead for him. OMG girlfriends! Aaaahhh!!!
My second son is starting 7th grade and I have every confidence that he’ll be fine. He’s at the same school as last year, has a good group of friends and knows the drill of middle school. Plus he’s super chill and easy going. Thank goodness! My third son is going into 1st grade and is one of my more social kids. He’s going to be just fine! I’m happy for him to be able to play on the “big kids playground” this year!
My youngest is starting kindergarten and I have such mixed emotions about it. He’s a really bright kid and needs to be pushed. I’m excited to really see him flourish this year. But I’m SO sad that he’s old enough to actually GO to kindergarten. Why is he old enough to go to a real school?! I’m excited for him and sad that he’s old enough to be in elementary school.
My kids are growing up. I need to accept it, right? Change is the only constant.
Since all of my boys are starting school, I need to be ready for them to come home extremely hungry. I mean, let’s be honest. My boys come home from school absolutely ravished. My older ones will eat every snack in the cupboard. This year, I’m going to be prepared. I will be making these peanut butter protein balls every week so they’ll have something healthy to grab when they come home from school!
I’m a huge fan of bite-sized snacks. They’re easy to grab on the go and because these protein balls are loaded with all good things like peanut butter and protein powder, all you really need is one or two for a quick energy boost. 🙂 Perfect to grab as an after school snack but also a yummy quick dessert too. Happy snacking!
Ingredients
- 2/3 cup quick oats
- 1/2 cup natural peanut butter
- 1/4 cup vanilla protein powder
- 1 Tbsp. Truvia Nectar or more to taste
- 2 Tbsp. mini chocolate chips I like Enjoy Life brand
Instructions
- Mix all ingredients in a mixing bowl until thoroughly combined.
- Roll into balls and enjoy!

These peanut butter protein balls look great and healthy. How long can I store them in the fridge after I made them?
Hi Daisy! I’ve never been able to keep a batch for more than a few days because my kids love them, lol! So for sure they stay good for at least 3 days. I would say depending on how dry your natural peanut butter is, that it would depend!
These sound amazing and I can’t wait to try them! A couple of questions though…
1) How long do they stay fresh in the air tight container?
2) Do you think they would be good to freeze?
