I hope you had a fabulous long weekend! I sure did! I got to spend some much-needed time with my crazy busy attorney husband. We got to see Jay Leno perform at a comedy club near us in Hermosa Beach! He performs there every weekend which is so cool. He was HYSTERICAL!!! I was crying from laughing so hard!
On Monday we took our boys to the beach and I got so sunburned. I can’t remember the last time I was this red. Ack! Next time I will remember to reapply sunscreen on myself instead of just my kids! Okay, on to today’s recipe. I gotta say I am not super pleased with these photos as they do not do it justice! My grandma had a recipe for pepper steak that wasn’t cooked in the slow cooker and was much more time consuming. So when I saw this slow cooker recipe, I knew I had to give it a try! It’s different from my grandma’s but is SO tasty. The beef is tender and flavorful and the peppers and onion give it a nice crunchy body. This meal is the perfect ending to a busy day!
Ingredients
- 2 pounds beef sirloin cubed or sliced (I use the pre-chopped beef stew meat)
- salt & pepper to taste
- garlic powder to taste
- cooking spray
- 1 cube beef bouillon
- 1/4 cup hot water
- 1 Tbsp. cornstarch
- 1 large yellow onion sliced
- 1 large yellow bell pepper sliced
- 1 large red bell pepper sliced
- 1 14.5-oz can stewed tomatoes (with juice)
- 3 Tbsp. soy sauce
- 1 tsp. sugar
- 1 tsp. salt
Instructions
- Sprinkle chopped/cubed sirloin with salt, pepper and garlic powder to taste. Heat a large skillet over medium heat, spray with cooking spray and brown the seasoned beef. Transfer to a slow cooker.
- Mix bouillon cube with hot water until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with meat. Stir in sliced onion and peppers, stewed tomatoes, soy sauce, sugar, and salt.
- Cover, and cook on High for 3 to 4 hours, or on Low for 6 to 8 hours. Serve over warm cooked rice. Enjoy!!
