Guess what today is? It’s my Birthday! I’m finally 21!
Ha. I wish I was just turning 21! I’m slightly older than that now… 😉
I remember wanting to be older than 21 when I was 21. Is that normal? I think I was a rare case at that age. I was pregnant with my second baby when I was 21, guys! I had my oldest at 18 years old so I was really ahead of the motherhood game.
I just remember thinking that I wished people would stop asking me if I was the babysitter/nanny instead of the mom and thinking how I’d love it when I was in my thirties, and people would finally stop asking me that.
Well, now I’m in my thirties.
I’d be glad to go back to those people who thought I was the nanny when I was in my 20’s and eat that compliment right up!
Okay, enough whining about getting older.
Birthdays are fun, right? Let me tell you what my sweet husband did for me today: he drove me over to the mall. 🙂
Yep. Shopping. My husband HATES shopping, so just the fact that he was willing to go to the mall? With me? Pure awesome.
But he took it a step further. He took me to Nordstrom (my most favorite store in the whole mall). We meet with this fashion expert aka a personal shopper. And then I get a bunch of fabulous clothes and bras and shoes!
Yeah. I had a total Pretty Woman experience. It was ah-mazing!!!!
Basically, my dream come true! It was such a great day. And what way to make a great day even better? Cookies.
Healthy Banana Cookies, to be exact. These cookies are great if you’re still sticking to those New Year’s resolutions, and want a healthy dessert option. They’re flourless and eggless, which is awesome and use Truvia in place of sugar.
They’re soft in the middle with a chewy exterior. I’m a huge craisin fan so I naturally added them to these. They add a tart, chewy component to the cookies, but you can sub raisins or leave them out altogether.
These are a great (healthy) way to end a great Birthday. Who needs a cake?!

Ingredients
- 2 ripe bananas mashed
- 1 cup quick oats
- 1/3 cup applesauce
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 2 Tbsp. Truvia Baking Blend or 1/4 cup sugar
- 1/4 cup Craisins or raisins
Instructions
- Preheat oven to 325ºF. Place a parchment sheet on (or spray with cooking spray) a cookie sheet.
- In a mixing bowl, mash the bananas. Add in the oats, applesauce, vanilla, cinnamon, nutmeg, and Truvia (or sugar).
- When combined thoroughly, Fold in Craisins. Scoop by tablespoon onto prepared cookie sheet and flatten out. (They will look just as you placed them on the cookie sheet and won't spread or change at all.)
- Bake for 30 minutes in preheated oven. Pull from oven and let cool for a few minutes and then take off cookie sheet to place on a cooling rack. Enjoy!

Happy Birthday! I had my oldest when I was 19 so I totally get it. People often think my kids are my siblings…LOL! My dad has always looked younger than his age so I guess that is where I get it from.

OMG Lori! It was absolutely amazing! I seem to have a weird shape for the styles these days. I’m small on top and have a little waist but have a booty and bigger hips/legs. The skinny jeans just aren’t flattering on me. So my main thing I needed help with was finding a style with skinny jeans that would flatter me and tops that are flowy but not huge on me. Anyway, my girl was so awesome. I left with a ton of shirts, two pairs of good skinny jeans, the cutest pair or booties and two new bras! (She had me fitted for a new bra and I was wearing way too small of a size!) All in all, I was very satisfied with my personal shopping experience and plan on going back again when it’s short season. I think it’s definitely worth it! And you don’t have to pay extra or anything, just buy the clothes that you like. 🙂 Thanks for reading my blog, too! So happy to have you!!
Hey Jen, I tried your healthy banana cookies (flourless/eggless)! I’m not one to stick to a recipe exactly (as I usually don’t have all the ingredients); but this one was pretty close, except I used whole oats, real sugar & sprayed pan with coconut oil! The first time they were a little too moist for my taste ~ couldn’t get anyone else to eat them (too healthy for a cookie? – but that was my goal!). The second time, I added 1 T. of flax seeds to give it more of a crunch ~ also ground the oats in a blender (so as not to be seen!) Baking them on parchment paper helped remove some of the moisture. Most all of them were eaten! I saved a few to freeze … and today I took one out to eat! Delicious on this HOT 4th of July weekend! Thanks much for the inspiration!
