Skinny Granola Cookie Wedges
If you said yes to any of those things, then you will LOVE these incredibly easy AND Skinny Granola Cookie Wedges!
I’m a crazy multi-tasker. Aren’t all moms? That being said, I love me a good multi-tasking dessert. 🙂
These Skinny Granola Cookie Wedges taste like a chocolate chip cookie but is in the shape of a pie, but also tastes like granola AND is low calorie all at the same time! See?? Perfect multi-tasker! And they only use ONE bowl.
And how can you not like a dessert like that?! Honestly though, this is one of the best low calorie desserts I’ve had. It’s rich, decadent and hits the spot with one single wedge. My boys LOVED it! Plus they freeze and refrigerate well, too.
It’s really simple to make. Here’s what you need to do:
- Combine the brown sugar, oil, butter, vanilla, salt, baking soda and egg white in a bowl.
- Add four, oats, nuts and chocolate chips and stir to combine.
- Pour into a 9″ pie pan and bake at 350 degrees for 13 minutes.
- You’re done! Slice into 8 slices and enjoy!
One bowl and easy ingredients plus only 168 calories per slice!

- 1 9" Pie Pan
Ingredients
- 1/3 cup packed dark brown sugar
- 2 Tbsp. canola oil
- 1 Tbsp butter melted
- 1/2 tsp. vanilla extract
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1 large egg white
- 2.25 ounces all-purpose flour about 1/2 cup
- 1/2 cup quick-cooking oats
- 1/4 cup toasted pecans chopped
- 2 Tbsp. semisweet chocolate chips
Instructions
- Preheat oven to 350 degrees F. Combine brown sugar, oil, butter, vanilla, salt, baking soda and egg in a large mixing bowl. Stir until well combined.
- Weigh or lightly spoon flour into measuring cup; level with a knife. Add flour, oats, nuts and chocolate chips to sugar mixture. Stir until just combined.
- Scrape the dough into a 9-inch glass pie plate coated with cooking spray and spread to the edges with a spatula. Bake at 350 degrees for 13 minutes or until set.
- Cool slightly on a wire rack. Cut into 8 wedges and ENJOY!!

I like your recipe Skinny Granola Bars. Your receipe was very tempting and interesting also. I will make healthy recipes for granola bars for my family, It is very easy and simple to home made. “Thanks for sharing this”.
Great recipe! I tweeked it a little bit for my own convenience. Instead of canola oil I used coconut oil and ended up using a whole medium-sized egg. I had no use for the left-over egg yolk and felt bad for it so I just threw it in. I guess this makes the texture more cake-like rather than more cookie-like? Haven’t tried it without the yolk yet. I also added more nuts and used a mixture of peanut, cashew, hazelnut, almond and Brazil nuts. So any type of nuts are fine really! Lastly, I ended up using rolled oats just because I didn’t have quick-cooking oats. The rolled oats give it a little more bite, which in my opinion was fine because the nuts did that too. Going to make it again now 🙂 Thanks for the lovely recipe!
