When I was a kid, I used to hate salads. For a vegetable with my dinner, I would have much preferred a side of carrots or some other vegetable. Salads just didn’t appeal to me at all. Flash forward to today and I love me a good salad!
What I love about making a salad at home is that you know exactly what’s in it. Making a homemade dressing means you can control the ingredients as well as the quality of ingredients that are going into it. No added preservatives or artificial anything. This Spinach Salad Recipe is filled with my favorite things. I actually love spinach and prefer it to other kinds of lettuce when it comes to a salad.
This Spinach Salad Recipe is topped with strawberries, blueberries, California Avocado, feta cheese, walnuts and red onion. The great thing about this salad is that you can add in or take out ingredients. If you don’t like blueberries, replace them with blackberries. If you don’t have feta on hand, use another mild cheese. It’s an easy way to switch things up and use what you have in the veggie drawer!
The homemade vinaigrette in this recipe is honestly what sets this salad apart from others. It’s SO GOOD. You know what else? It’s SO EASY! Throw all the ingredients into a mason jar, shake up and BAM. Dressing that’s healthy, clean and yummy. The honey-garlic vinaigrette pairs really well with the fruit because of the honey in it but also compliments the spinach because it has a savory aspect to it as well.
I’m a California girl and I’d like to think that if a summer dish could have a Hollywood Star on the Walk of Fame, this salad could close the deal. With pops of color and textures, this easy-to-make spinach salad recipe will quickly become your next California Avocado Season staple!
Spinach Salad Recipe with Avocado, Berries & Honey Vinaigrette
Ingredients
Dressing Ingredients:
- 2 Tbsp. olive oil
- 1 Tbsp. honey
- 1 clove garlic finely minced
- 1 Tbsp. apple cider vinegar
- 1/2 tsp. sugar
- 2 tsp. fresh lemon juice
- 1/4 tsp. Kosher salt
- 1/4 tsp. cracked black pepper
Salad Ingredients:
- baby spinach leaves
- 1 California Avocado halved, pitted and sliced into slices
- fresh strawberries sliced
- fresh blueberries
- red onion sliced thinly
- pecans
- feta cheese
Instructions
- In a mason jar, add in all of the dressing ingredients and shake up to mix together.
- In a large bowl, add desired amount of baby spinach leaves. Top with strawberries, blueberries, avocado, red onions and pecans. Sprinkle with feta cheese. Drizzle dressing on top when ready to eat. Enjoy!
